Coconut pancake
This dish my sister and brothers are very interested in: to eat and to do. Extremely easy, extremely fast and extremely delicious
And there is a Pancake's collection of my family .
This is one version of them: COCONUT PANCAKE
Ingredients:
3 / 4 cup cakeflour (180gr)
2 tbs baking powder (7g)
1/4 tbs salt
2 tsp sugar (28g)
2 egg whites ( size L)
1 / 4 cup fresh milk (60ml)
1 cup coconut milk or coconut cream (240ml)
2 teaspoon oil to fried cake - no butter because flavor of butter will overwhelm and lose flavor characteristics of coconut milk - I don't like!
Method:
Sift together the flour, salt, sugar, and baking powder.
Add eggs, coconut cream into the bowl that has the dry ingredients. Now blend that together while gradually adding all the milk into the mixture.
Fry on a lightly oiled pan. The size of the pancake can be any size but should be about 1 - 1 1/2 cm thick
Flip the pancakes when the edges are dry and the top is bubbling
